December’s Winter White Veggie – Cauliflower

Cauliflower, in it’s milky white glory, is fresh and in season beginning in December and lasting through March. This winter veggie has a white curd unlike it’s broccoli relative that is green. The leaves of the cauliflower hide the curd and chlorophyll never gets a chance to fully develop and infuse the cured with green.
If white veggies bore you, try the purple or orange cauliflower! We love to buy purple and orange cauliflower to make a fun kid veggie tray! These colors would make an enticing mashed veggie entrée for your older baby who likes lumps and bumps!
Like broccoli, cauliflower is known to cause some folks gas so we would recommend serving it to babies 8 months and older. Of course, you may serve it earlier if you prefer.
Here is a yummy cauliflower soup recipe suitable for the whole family
Creamy Cauliflower Soup
2 tbs butter
1 large onion
2 large potatoes (peeled and cubed)
2 carrots, chopped
2 cups natural chicken broth
1 head cauliflower – chopped
1 cup milk
1 tsp salt
1/2 tsp ground black pepper
1/8 tsp ground nutmeg
1 tablespoon chopped fresh parsley
Melt the butter in a large pot. Stir in the onion and sauté until onion is translucent. Stir in the potatoes and carrots and cook for 10 minutes.
Pour in chicken broth and bring to a boil then stir in cauliflower. Cover the pot and reduce the heat to a simmer. Simmer until vegetables are tender, 10 to 20 minutes. Remove from heat.
Puree in batches in a blender or food processor, or in the pot using an immersion blender. Return to low heat and stir in milk, salt, pepper, nutmeg and sherry. Heat through. Serve garnished with parsley.

LOL, no not really. Forgot to cross that out in the directions tho we left it out of the ingredient list. However, some say that cooking with alcohol such as sherry and wine is fine (pardon the rhyme!) because most of the alcohol actually burns off. Most of is relative to the alcohol used.
This is an interesting chart about alcohol “burn off” during cooking. As is this linkPersonally, unless it’s marsala, I never cook with alcohol of any kind.
