Of the charitable causes my family supports, our monthly donation to UNICEF is the one that we feel most passionately about. Sure we give money, once a year, to other causes but we think UNICEF is special and deserves monthly support.  Monthly support doesn’t have to be a lot of money, even $10.00 a month is a big help! $25 a month (about 80¢ a day) can provide vitamin A for 7,500 children. Anyway, I received this email from UNICEF today and thought I’d just post about it.Â
“Sunday is Mother’s Day, and its not too late to honor her with gifts that will make a lasting impression on a kid’s life —UNICEF Inspired Gifts.
Inspired Gifts is an innovative program that allows you to purchase real, lifesaving products—like family water kits and oral rehydration salts—to be shipped directly to one of over 150 countries where UNICEF is saving children’s lives.
Unfortunately, mothers in Myanmar are facing unbelievable challenges this Mother’s Day. Thankfully, UNICEF’s Myanmar office has already delivered essential supplies—including first aid kits and oral rehydration salts—to the hard-hit Laputta township, and teams were deployed to Yangon and Irrawaddy Monday.
UNICEF has sent 3 million water purification tablets to Myanmar, enough to provide clean water to 200,000 people for a week.
Help us restock our warehouse shelves with family water kits, oral rehydration salts, and mosquito nets before the next disaster strikes. Then, let her know about your gift with a personalized ecard.Â
She’ll be honored, and both of you will be proud. “
Don’t forget to check out the UNICEF online gift shoppe too! They have really wonderful stuff made by local folks in countries where UNICEF goes. You get neat stuff and support local communities.Â
And least we forget, Gucci has created a handbag through the UNICEF partnership programme. Creative Director Frida Giannini created a special edition “GUCCI for UNICEF” Indy bag that will benefit UNICEF through November 2008. Gucci will donate 25 percent of the sales from this bag to critical treatment and prevention programs in Malawi and Mozambique.  Um…..it would take us years of saving to buy this bag but hooray for Gucci! You can view the other UNICEF partnership specials here.
So if you’re at a loss for what to get Mom, or if you just want to help out - consider UNICEF!
We’re buying Mom a goat through Heifer this year (see our sidebar note!) :-)Â Yea, she does like these gifts!

Taking my favorite scalloped potato recipe below, we changed it up and used sweet potatoes, nutmeg, cinnamon & a pinch of ginger.   Substitutions will be noted with ** incase you want to try this with white potatoes!
What you need:
5 large potatoes, peeled and thinly sliced ** 8 medium sized sweet potatoes**
3/4 cup chopped onion ** omit **
3 tablespoons butter or margarine ** 5 tablespoons - use butter **
1/4 cup all-purpose flour ** 1/2 cup flour **
1 3/4 cups chicken broth ** 2 cups water & 1 3/4 cups chicken broth **
2 tablespoons mayonnaise ** omit or use 4 level tablespoons **
3/4 teaspoon salt ** quick shake of salt **
1/8 teaspoon pepper ** omit and instead add cinnamon, nutmeg, ginger to your taste **
Paprika ** omit **
How to make it:
In a greased 2-1/2-qt. baking dish, layer potatoes and onion.Â
(We add a sprinkle of cheddar to each layer too when making this with white potatoes)
In a saucepan, melt the butter; stir in flour until smooth. Gradually add broth, mayonnaise, salt and pepper (spices);
cook and stir for 2 minutes or until thick and bubbly
(we find this takes about 15 minutes on medium heat and whisking every few minutes)
Pour mixture over potatoes. Sprinkle with paprika. (If not opposed to sugar, mix cinnamon & sugar and then sprinkle on)
Cover and bake at 325 degrees F for 2 hours or until tender
This comes out sooooo soft and yummy! Your 8 month old + baby would easily be able to eat this as finger food! Make sure to smoosh or cut into managable bits!
Enjoy!
